Bacon and mushrooms tartlets / Tarteletes de bacon e cogumelos.


My children and I, we love savoury tarts and even if my husband is not a big pastry lover, everyone else here at home love it so, pastry days is torture day for him and even if he moans a lot, he ends up eating it, sometimes eating the filling and leaving the pastry behind and, other times, eating everything and saying that it was delicious and that was the case with these delicious tartlets.
The recipe says to cut the pastry into squares but I cut it in rounds.
ingredients (makes 6):
500g puff pastry
plain flour, to dust
1 egg, beaten with 1 tsp water
for the filling:
100g bacon lardons
1 small onion, chopped
25g butter
2 garlic cloves, crushed
225g button mushrooms, quartered or halved
2 tsp chives, snipped
salt and freshly ground black pepper
pinch of grated nutmeg
to finish:
3 tbsp crème fraîche
snipped chives, to garnish


method:
Preheat the oven to 200ºC and line a baking tray with baking paper.
Cut the pastry into 2  equal pieces. Roll each piece of the pastry into a rectangle about 20 x 30cm.
Trim the edges and cut 6 squares or rounds from each piece of pastry.
Place 6 squares or rounds of pastry on the baking tray and brush the top with the egg wash.
Cut out the centre  of the remaining 6 rounds in order to have a 1cm wide border and place the cur out borders on top of the rounds to form the tartlet cases. Press down slightly.
The cut centre pieces can be baked and used as lids for the tartlets.
Brush the pastry borders with a little egg wash.
Bake the pastry cases in the preheated oven for 15 to 20 minutes or until risen and golden.
Meanwhile prepare the filling.
Dry fry the bacon in a frying pan over a high heat until the fat begins to run.
Add the onion and continue cooking until the bacon is crisp and the onions are beginning to colour.
Reduce the heat and add the butter. When the butter has melted, add the garlic and cook for 1 minute.
Add the mushrooms and sauté for 10 minutes until they are tender. Stir in the chives and season with salt, pepper and a pinch of nutmeg.
When the pastry cases are cooked, transfer to serving plates and spoon in the mushroom filling.
Top with a little crème fraîche and a sprinkling of chives and serve hot or cold.

Cá em casa, tanto eu como os miúdos adoramos tartes salgadas. O meu marido, esse faz sempre fita para comer seja o que for que leve qualquer tipo de massa e acaba sempre por raspar os recheios, seja de salgados ou doces e deixar a massa no prato, o que é bastante irritante.
Ás vezes, mesmo refilando, lá come e até acaba por assumir que até estava muito bom e estas tarteletes foram umas das que receberam elogios no final e até a massa folhada foi comida sem muita "refilice".
ingredientes (para 6 tarteletes):
500g massa folhada
farinha, para a bancada
1 ovo, batido com 1 colher chá de água
para o recheio:
100g lardons de bacon
1 cebola pequena, picada
25g manteiga
2 dentes de alho, picados
225g cogumelos brancos, cortados em quartos ou ao meio
2 colheres chá de cebolinho, cortado com uma tesoura
sal e pimenta preta moída na altura
uma pitada de noz moscada
para terminar:
3 colheres sopa de crème fraîche
cebolinho cortado com a tesoura, para decorar


preparação:
Aquecer o forno a 200ºC e forrar um tabuleiro grande com papel vegetal.
Cortar a massa folhada ao meio em 2 pedaços iguais e, sobre uma superfície enfarinhada, esticar cada pedaço de massa num rectângulo de cerca de 20 x 30cm.
Aparar as pontas e cortar 6 quadrados ou rodelas de massa de cada rectângulo.
Colocar 6 rodelas de massa no tabuleiro e pincelar as superfícies da massa com o ovo batido.
Cortar o centro das restantes 6 rodelas de massa, por forma a obter bordaduras de cerca de 1cm. Os centros podem ser cozidos no forno e servir de tampa para as tarteletes.
Colocar as bordaduras em cima das rodelas que estão no tabuleiro e pincelá-las com ovo batido.
Levar o tabuleiro ao forno por cerca de 15 a 20 minutos, ou até que a massa tenha crescido e esteja douradinha.
Entretanto, para preparar o recheio, aquecer uma frigideira sobre lume forte. Adicionar o bacon e cozinhar até que o bacon comece a dourar e a libertar gordura. Adicionar a cebola e continuar a cozinhar até que a cebola comece a ganhar cor.
Baixar o lume e adicionar a manteiga. Quando a manteiga estiver derretida, adicionar o alho e cozinhar por 1 minuto.
Adicionar os cogumelos e saltear por 10 minutos, ou até estes estarem macios.
Desligar o lume, adicionar o cebolinho e temperar de sal, pimenta e noz moscada. Reservar.
Quando a massa estiver pronta, colocar cada rodela num prato de serviço. Encher com o recheio e decorar com uma colherzinha de crème fraîche e mais cebolinho.
Servir quentes ou frias.
