Smoky Paprika Chicken with Crispy Chickpeas, Roasted Lemon and Kale / Frango com Paprika Fumada, Grão de Bico Crocante, Limão assado e Kale.



By the amount of chicken recipes that I publish, you might well already guessed that we love chicken here at home. Well, it's true!
This recipe, from Melissa Clark "Dinner: Changing the Game" cook book is a stunner!
The chicken is moist inside, with a perfectly crisp skin outside. The combination of the lemon, kale and crispy chickpeas is totally genius and the whole dish is absolutely delicious and full of textures and contrasts.
As you Know, this month we are cooking from Melissa's book for the Rainydaybites Cook Book Club and of course, this recipe had to be shared because you'll be in love with it if you get to try it and, it's also super easy to put together.

ingredients (serves 4 to 5):
1 whole chicken (around 2kg), patted dry with paper towels
1 tbsp sea salt, plus more as needed
1 tbsp freshly ground black pepper
small bunch mixed fresh herbs (rosemary, thyme, sage)
1 lemon, preferably Meyer lemon
1 1/2 cups cooked chickpeas, rinsed and drained
2 tbsp extra virgin olive oil, plus more if needed
1/2 tsp sweet smoked paprika
1/2 tsp hot smoked paprika
6 cups baby kale or spinach


method:
Season the chicken inside and out with 1 tbsp of salt and pepper. Refrigerate it, uncovered, for at least 1 hour or overnight.
Heat the oven to 230ºC.
Place the chicken, breast side up, on a large rimmed baking sheet.
Stuff the cavity with the herbs and roast in the hot oven for 1 hour.
Meanwhile, bring a small pan of salted water to a boil.
Slice the lemon in half lengthwise and reserve one half.
Slice the remaining half lengthwise and then slice the pieces crosswise into thin triangles.
Drop the lemon triangles into the boiling water and cook for 1 minute. If not using a Meyer lemon, you need to repeat this blanching process once more in order to eliminate some of the lemon's bitterness.
In a small bowl, toss the blanched lemon with the chickpeas, the olive oil, both paprikas and a very large pinch of salt.
Baste the chicken with the pan juices and scatter the chickpeas mixture over the bottom of the baking sheet.
Continue to roast until the chicken is cooked through and the chickpeas are crispy, that can take around 20 minutes.
Transfer the chicken to a cutting board to rest.
Scatter the kale over the hot baking sheet and toss it with the chickpeas, scraping up any browned bits from the bottom of the baking sheet.
Top with the juice of the reserved lemon half and sprinkle lightly with salt.
If the mixture looks a bit dry, drizzle with some olive oil (I didn't need).
Serve the kale and chickpeas mixture alongside the chicken.

Podem concluir pela quantidade de receitas de frango que publico, que frango é um ingrediente não só muito consumido, mas também muito apreciado cá em casa.
Esta receita, mais uma do livro da Melissa Clark, o "Dinner: Changing the Game" é mais uma receita que não podia deixar de partilhar, pois além de fácil de preparar e rápida, é super deliciosa e uma explosão de sabores e texturas.
O frango, suculento e macio no interior e com uma pele super estaladiça e crocante no exterior, é, por si só, uma razão mais que suficinete para experimentarem esta receita, mas, a adição do limão, com o grão de bico crocante e a kale, são uma combinação dos céus e de comer e repetir até mais não...
Como já vos disse antes, este mês estamos a cozinhar deste livro fantástico da Melissa Clark, para o Rainydaybites Cook Book Club e, claro, não podia fazer esta receita magnífica e não a partilhar convosco.
Assim sendo, aqui fica, para o caso de a quererem testar!


ingredientes (para 4 a 5 pessoas):
1 frango inteiro, com cerca de 2kg, de preferência caseiro e bem seco por dentro e por fora, com papel absorvente de cozinha
1 colher sopa de sal marinho + extra, caso seja necessário
1 colher sopa de pimenta preta, moída na altura
um ramo pequeno de ervas aromáticas, tais como, tomilho, salva e alecrim
1 limão, de preferência Meyer
1 1/2 cups de grão de bico cozido, passado por água e escorrido
2 colheres sopa de azeite extra virgem + extra, caso seja necessário
1/2 colher chá de paprika fumada doce
1/2 colher chá de paprika fumada picante
6 cups kale ou de espinafres


preparação:
Temperar o frango (interior e exterior) com 1 colher sopa de sal e pimenta preta acabada de moer.
Colocar o frango sobe uma grelha colocada sobre um tabuleiro e refrigerar, destapado, por um mínimo de 1 hora ou de um dia para o outro.
Aquecer o forno a 230ºC (sem ventoinha).
Colocar o frango, com o peito virado para cima, sobre um tabuleiro com lados elevados.
Colocar as ervas aromáticas na cavidade do frango e levar ao forno por 1 hora.
Entretanto, colocar um tacho pequeno com água ao lume, até esta levantar fervura.
Cortar o limão ao meio no sentido do comprimento e reservar uma das metades.
Cortar a outra metade em meias luas e depois, cortar as meias luas em pequenos triângulos.
Colocar os triângulos de limão no tacho e ferver por 1 minuto.
Caso não usem limão Meyer, repetir o processo, a fim de extrair a acidez do limão.
Findo este processo, escorrer o limão sobre um coador.
Numa taça pequena, combinar muito bem o limão fervido, o grão de bico, o azeite, ambas as paprikas e uma boa pitada de sal.
Regar muito bem o frango com o molho que entretanto se formou no tabuleiro.
Deitar a mistura do grão de bico no tabuleiro, à volta do frango e levar ao forno por mais 20 minutos, ou até o frango estar cozido e o grão de bico estar crocante,.
Transferir frango para uma tábua e deixar repousar.
Entretanto, colcoar a kale no tabuleiro e misturá-la muito bem com a mistura do grão de bico, deixando que esta coza no calor residualdo tabuleiro.
Raspar bem o fundo do tabuleiro, enquanto envolve muito bem todos os ingredientes.
Quando tudo estiver bem misturado, polvilhar com uma pitada de sal e regar com o sumo da metade do limão reservada. Voltar a envovler tudo muito bem.
Caso a mistura pareça muito seca, regar com um fio de azeite (eu não achei necessário).
Servir o frango acompanhado da mistura do grão e kale.
